Favourite Recipes
These are meals I’ve made and love.
LEMON ASPARAGUS PASTA. Make sure you use unsweetened almond milk, not original. Also I add literally 3x the amount of nutritional yeast than the recipe suggests.
FETA CHICKEN RICE BOWL. No notes, perfect and easy. I make it like once a week.
CHICKEN SWEET POTATO AVOCADO BOWL. If you don't love doing homemade hummus from scratch, get a store bought hummus and loosely blend it with a whole extra can of chickpeas so its more of a chickpea mash than pure hummus. I like it chunkier.
SMOTHERED CHICKEN.
THAI CHICKEN PEANUT RAMEN. I just made this for the first time and was obsessed, but it took a LOT longer than I thought. Next time I'll use half the amount of ramen, as it soaked up like ALL the broth. Make sure to use cast iron to get the same chicken texture, and taste as you go cause some might find there's too much salt, peanut butter, or curry paste.
KALE SALAD WITH JAMMY EGG. Use like twice the amount of kale you think, cause when you pop it in the skillet, it disappears. I usually use 2 full heads of kale (cooked) and then a whole bunch of "baby" kale (raw) so there's still some freshness to the salad.
ASPARAGUS MUSHROOM ORZO. The amount of steam this creates in the oven is actually concerning lol. Definitely split between 2 sheet pans to properly char the veg.
BURRATA PEACH CHERRY SNACK BOWL. This works okay with frozen peaches and cherries too (just soak in the oil/vinegar mixture for a couple hours.)
BLACKBERY AVOCADO GOAT CHEESE SALAD. The fried goat cheese makes this elite. and the marinade/dressing is so good, but it makes the chicken look creepy and purple tbh.
